Greek Pizza with Dry Coppa, tomato, olives and rosemary
1 ready made Pizza crust
  Topping
6 thick slices Mozzarella
3/4 cup Cherry or roma tomatoes, halved
1/3 cup Small olives
1/3 cup capers
3 T Fresh Rosemary
20 slices Dry Coppa
  Fresh Black Pepper

Preheat oven to 425°F. Place two baking trays that will fit the pizzas into the oven to heat. If using fresh dough, divide into 4 pieces and roll out on a lightly floured surface until 2-3mm (1/3 inch) thick.

Place the pizza bases onto nonstick baking paper and brush well with oil. Top with cheese, tomatoes, olives, capers, rosemary, coppa and pepper. Slide the pizzas on the paper onto the hot baking trays and place in oven. Bake for 15 minutes or until the crust is golden. Serve with salad greens.
